Ingredients

  • 2 lbs Lamb Shanks or Pork Loin
  • 1 large white onion quartered
  • 1 carrot
  • 1 can tomato sauce
  • 1 tbsp Garlic Powder
  • All Purpose Flour for dredging
  • Kosher Salt

Directions

  1. Preheat oven to 350f
  2. Trim as much fat as possible
  3. Season with salt and garlic powder
  4. Dredge in All Purpose Flour
  5. Brown in oven uncovered, approximately 10 minutes
  6. Pour off fat
  7. Add onion
  8. Pour 1 can of tomato sauce over shanks
  9. Cover and let roast at low heat 250f until done (about 2 hours)
