(SERVES 6-8)

Ingredients

  • 3 16 oz jars tomato sauce
  • 2 eggs
  • 2 cups ricotta cheese
  • 12 lasagna noodles
  • 1/3 cup Spinach chopped and steamed
  • Grated nutmeg
  • 1 lb Mozzarella
  • 1/2 Parmesan or Pecorino romano grated
  • Kosher salt

Directions

Preheat Oven to 375f

Filling:

  1. Beat 2 eggs
  2. Add Ricotta, Nutmeg, Salt, Pepper, Spinach

    In pan layer the following:

  3. Sauce
  4. 1/3 noodles
  5. ½ ricotta mixture
  6. Repeat 2 more times
  7. Cover with Parm/Romano
  8. Bake covered for 45 minutes
  9. Bake for an additional 15 minutes uncovered
  10. Let rest at least 30 minutes before cutting
